This Holiday Story was submitted by Beverly German.

"One of my fondest holiday memories that I would like to share with you now"

Two Christmas's ago, my son was the President of our Lake Association. It was at the December Board Meeting that a vote was passed by a "Board of Scrooges", to put a lien on a neighbor's home, for delinquent Association dues. We did not know the lady personally, but had heard stories of her misfortune. She had recently lost her husband to cancer, her home burned to the ground, and she was a single parent with 3 young children, and very little disposable income, living in a makeshift trailer.

My son, Christopher, pleaded with the Board to delay any property liens until the Christmas season had passed. The Board remained unmoved at his Christian ideals. With lien paperwork ready to go, the Board voted that the lien be placed on her property December 23rd! Since he could not reverse the Board's vote, (Presidents have no vote) he decided to take the matter into his own hands. He immediately began contacting vendors for donations. He got insulation for her trailer donated by Home Depot, a turkey was donated by Stop and Shop, and food donations were made by various neighbors who had heard of his good deed. A local contractor volunteered to install the insulation and make any immediate repairs the trailer needed, to insure a warm safe Christmas for her and her family. Age appropriate toys and gifts were donated for the whole family and a "secret Santa" even paid the arrears lien! Food, neighbors and toys all were packed, ear muff to ear muff, into a big, open bed truck. As we drove up the hill to her home, jingle bells were jingling and carolers were singing, as we slowly pulled into her driveway. A procession of about 20 people, like ants in a row, marched up her frozen, snow covered path with boxes, bags and Christmas stocking, loudly singing, "We Wish You a Merry Chritstmas". As we all attemepted to pack ourselves into her tiny trailer to dispense our gifts; her surprised face brought tears and smiles to all in the room. At that moment, my son turned to me and with a big warm hug, said, "Mom, this is my best Christmas ever". The warm glow of the kind hearted deed followed me for weeks, and gave me yet another reason to be proud and happy with the kind of man my son had turned out to be.
May you and yours feel the love and warmth that I have known this holiday season".

Potato Filling (A Pennsylvania Dutch Treat) - Delicious!

4 or 5 fairly large potatoes
1 cup diced celery
1//2 cup diced onion
1/4 lb of butter
4 slices of bread (cubed)
1 or 2 eggs

Pare potatoes, cut, and cover with water and about 1/2 teaspoon of salt.
Boil until soft. Saute celery and onion in 1/4 lb of butter until slightly
soft. Add cubed bread and steam together. Cover pan (you can moisten the
bread with slight amount of water from potatoes).
Drain liquid from potatoes (save some of the water). Add sautéed celery,
onions, bread. Mix well. If too stiff, add some of the potato water you
saved. Put in 11/2 quart greased casserole dish. Bake at 350 for about 30
minutes or until brown. (Before putting in oven, put slices of butter -
about 1 tablespoon - on top of mixture).

Favorite Christmas recipe, you say? This one has been served for the last 15 years- always a favorite!!
Gingerbread Trifle (With Lemon Cream and Cherry Sauce) Recipe #228844
Been making this one since 1997 when it first made its appearance in BH&G Holiday Cooking.
by Julie B's Hive

40 min | 40 min prep

SERVES 10

    * 1 (14 ounce) package gingerbread mix

CHERRY SAUCE

    * 1/2 cup brown sugar
    * 2 tablespoons cornstarch
    * 1/2 teaspoon ground cinnamon
    * 1 1/2 cups cranberry juice cocktail
    * 1 1/2 cups frozen pitted tart cherries
    * 1 (29 ounce) can pears, drained and sliced

LEMON CREAM

    * 1 cup whipping cream
    * 1 teaspoon vanilla
    * 1 cup purchased prepared lemon pudding

   1. Make gingerbread according to directions. When cool enough to handle cut into 1-in cubes.
   2. MAKE CHERRY SAUCE: combine brown sugar, cornstarch and cinnamon in a medium saucepan. Stir in cranberry juice cocktail. Add frozen cherries. Cook and stir until thick and bubbly then cook an additional 2 minutes. Cover and cool without stirring. NOTE: this mixture can be made up to three days ahead, covered and refrigerated until needed.
   3. MAKE LEMON CREAM:.
   4. Beat whipping cream and vanilla just till soft peaks form. Fold in lemon pudding. Stir gently until combined.
   5. TO ASSEMBLE:.
   6. Spoon 1/3 the lemon cream into a trifle dish. Add 1/3 the cherry sauce. Top with half the pears and 1/2 the gingerbread.
   7. Repeat this layer once and top with remaining 1/3 cherry sauce.
   8. Keep refrigerated.

I usually use more of the lemon creme mixture to be generous. It's easy, looks great, and taste delicious.
Merry Christmas!
